We uncap the honey comb the OLD FASHIONED WAY with a fine comb and NOT A HEATED KNIFE that actually boils honey it comes in contact with during the uncapping process.
We never heat our honey above 100-105 degrees F. (The Same temperature in the hive on a hot day!)
We have to raise the temperature of the honey to about 100-105 degrees F so it flows better into the final containers and the dead bees, large pieces of pollen, ect float to the top and are removed. We do NOT strain our honey either.
The Big Boys heat their honey to about 120 degrees F so they can run it through a strainer and smaller mesh screens. These higher temperatures not only permit the honey to flow through their finer strainers but also KILLS OFF a lot of enzymes, bacteria, ect (The good stuff.)
We sell only RAW LOCAL HONEY produced right here on the farm from locust trees, flowers, a little buckwheat we plant as a cover crop at times, clover, ect.
We never treat our bees chemically for mites or any other infestations
**NOTE: It is not recommended that raw honey be fed to anyone under the age of one because of their digestive system has not fully developed to digest the honey.**
